However, cooking it properly could be the difference between a healthy meal and a horrible long weekend. Luckily, there are a number of sources that can help. The USDA has this Let's Talk Turkey Fact Sheet, with information about serving sizes, defrosting methods and cooking times (for both stuffed and unstuffed turkeys). You can also call the USDA's Meat and Poultry Hotline for more advice. They've also got "Ask Karen," an automated response system and a live chat service, available 9 a.m.-3 p.m. ET on weekdays (except holidays). Also, there's the famous Butterball Turkey Hotline, which has been handling holiday turkey questions for almost 30 years. The library also has a number of turkey-specific cookbooks, with lots of ideas for making your traditional version or updating with some new touches.
